I used: 4 Cups fresh peaches, cut up, 2 Cups sugar, 1/3 Cup water, 1 1/2 Cups flour, 1 1/2 tsp baking powder, 3/4 Cup milk, 1 cube butter. Combine peaches, 1 cup of sugar, 1/3 Cup water; bring to a boil. Simmer 10 minutes. Remove peaches and boil syrup another 15 minutes. Pour peaches and syrup into an 11" x 13" baking pan. Combine flour, remaining cup of sugar, baking powder and cut in cold butter until resembles cornmeal. Add milk and mix lightly. Drop batter in dots and dollops over peaches and syrup. Bake at 350 degrees for 30 to 40 minutes.
Here's an easier way, from Serena's (she's the Elegant Bohemian) Grandmother: Melt one cube of butter in the pan, mix one cup each of sugar, flour, and milk and add to the pan, top with three cups fruit and cook at 350 for 20 minutes.
That peach cobbler sounds delicious. I must try it soon while peaches are still in season. I usually use the quickie recipe for cobbler that you mention at the bottom.

Oh, dear. My mouth watered last year and this year too. It appears that we've been called to St. Louis to rescue our "Huck." It remains to be seen whether I will be home on Monday...for shopping.
ReplyDeleteHi Sanda - Both recipes make a great cobbler. The easier one requires really ripe peaches, while the one where you boil them works no matter how ripe they are.
ReplyDeleteHi Terri - Oh my! I hope "Huck" is easily rescued. This won't be the only time I tag along to KC with my husband. Hard to resist Cost Plus and Trader Joe's, although I was dismayed to find no IKEA.
